Veg Clear Soup | Restaurant Style



Veg Clear Soup
Ingredients :
1 Cup = 250 ml
Vegetable stock :
Take a pan and add
1 lit – Water Let boil and add
Onion
Cabbage n hard Part
Spring onion green Part
Broccoli hard Part
Carrot hard Part
Coriander Stem
Ginger Skin
Sweet Corn upper Silk thread
Green Tea leaves
Wash Properly put into Boiling Water and mix it and cook for 10-12 min in Slow Flame , strain the water

Take Half Water in Pan ( Parboiled Vegetable)
1/4 Cup – French Beans Finely Chopped
1/4 Cup – Carrot Finely Chopped
2 tbsp – Baby Corn Chopped Finely
Let boil for 5 min means 1 boil and then add
1/4 Cup – Cabbage Chopped Finely
Boil in high flame and strain it
Put immediately Chilled Water

Take 1 Pan
1 tsp – Butter
1/2 tsp – Oil
1 no – Onion Chopped ( Small Size )
1 no – Bay Leaf
1 tbsp – Ginger Chopped finely
1 tbsp – Roughly Crushed Garlic
1 tbsp – Green Chilli Chopped
Sauté very well in high Flame , make it light Golden Colour
1/4 Cup – Capsicum Chopped
2 tbsp – Red Capsicum Chopped
Sauté and add
3 Cup – Vegetable Stock
Salt to taste
1/8 tsp – Black Pepper Powder

Slurry :
1 tbsp – Corn Flour ( Starch )
1/4 Cup – Water
Make it Slurry mix very well

Add
Add above Slurry
2 no – Maggi Cube
Let boil in high Flame
2 tbsp – Sweet Corn boiled
2 tbsp – Coriander Leaves
Chopped
1 tbsp – Spring Onion Chopped
Boil little and Switch of the Flame and add
1/2 tbsp – Lemon Juice mix well

Assemble
Take a Soup bowl
Put Above Parboiled Vegetable + u can add Parboiled broccoli small
And Pour Soup over it
and Serve
